Odds are by now you’ve heard about Nashville Hot Chicken. The dish seems to be taking over menus across The South. We like our chicken fried, and now we like it spicy.

The best rendition of the dish I’ve had to date is on the menu every Friday at Parish in Atlanta, Ga. That’s right, you can get the Tennessee dish in Atlanta at a Louisiana restaurant. Welcome to the melting pot.

Some versions of hot chicken are painfully hot. Not this version: It packs enough spicy heat to make it interesting, enough to make your taste buds dance with joy, but not so much that you’ll sit in fear of bursting into flames. It’s not all about the coating: The meat is tender and juicy.

On Fridays from 5:30 to 11 p.m., Parish offers Nashville hot wings for $6 and half a Nashville hot chicken for $18. Enjoy your choice with buttermilk, sour dill pickles, tomato celery salad and bread.

This is the chicken you want to lick off your fingers.
