Tacos pack an inherent risk: Hold one up to take a bite and, odds are, juice will drip out and start to slide down your hand and arm.

Sure, these drops are easy to clean up with a tongue or napkin—just remember to roll those sleeves up. Still, it’s always pleasant to discover the stream is caused by some flavorful sauce mingling with moist fillings rather than grease.

At Verde Taqueria, expect fresh. This is no dive taco joint. Here, drips spring from creations like homemade barbecue sauce, cilantro sour cream, chipotle ailoi, jalapeño ranch sauce, spicy cocktail sauce, and salsa verde. These are drizzled atop temptations like pulled pork, braised beef short rib, fried calamari, fried chicken in buffalo sauce, fajita steak, fried tilapia, and more.

Tradition and innovation coexist on this menu, where tacos shine but aren’t the only option. You’ll also find soups, salads, quesadillas and daily specials. The bar showcases traditional and creative cocktails, including a spicy-tart grapefruit habanero margarita that packs just enough spicy heat to make it interesting.

Verde was founded in 2009 by four friends in Atlanta’s Brookhaven neighborhood; a second location opened in Collier Hills in 2011.

Chef Joe Macy recently joined the team as executive chef. Macy has previously worked at Magnolias in Charleston, S.C., and Atlanta’s Local Three and BLT Steak. Press materials explained his culinary philosophy relies on cooking for the seasons, shopping as locally as possible and having a great time in the kitchen.

“I love the connection formed when someone is passionate about the food they produce, not just a chef but a farmer as well,” Macy said. “I try to keep my food fairly simple, showcasing products I source from local farms in the best light possible.”

Bite into a Verde taco and you’ll be glad for every last juicy drop.
